What are the opportunities for organic meat, and what do processors need to do to meet that demand? Ironically, farmers have reported that they’re dropping organic certification because they cannot access organic processing – despite Iowa alone being home to nearly 200 organic livestock operations. This session will provide practical insights and strategies for processors to compete in the organic marketplace.
Session led by: Dave Carter is a Regional Director of Regional Technical Assistance Coordination for the Flower Hill Institute, which seeks to create a more resilient, diversified, and equitable meat and poultry processing system. He also runs Crystal Springs Consulting, Inc. and is the former Chair of USDA’s National Organic Standards Board.
