Join us for a fascinating journey into the world of chocolate! Joao DaCosta, owner of Lehigh Fine Foods in Bethlehem, will lead an engaging discussion on this ever-popular food, explaining the concept of bean-to-bar chocolate and the differences between bean-to-bar and industrial varieties. DaCosta, who travels around the world to locate premium fair trade and organic food products—from olive oil to chocolate, tea, and coffee—will also examine how chocolate is grown, both in eco-forestry and organic systems, and how these different methods influence flavor. Participants will have an opportunity to sample 80% dark chocolate, 70% dark chocolate, and other types grown in eco-forestry systems.
